Cranberry Nut Muffins

One of the [many] reasons that I love vegan baking, is that I can freely eat the batter without worrying about getting the salmonella. Dave says uncooked eggs are totally safe, I disagree though I am admittedly quite a bit irrational when it comes to the salmonella. Enough about salmonella.

These are some tasty muffins.

ingredients~
dry
1 1/3 c flour
3/4 c oats
1/3 c sugar
2 tsp cinnamon
2 tsp baking powder
1/4 tsp salt

wet
1/4 c applesauce
3/4 c 'milk'
1/4 c oil

good stuff
1 c walnuts
1 c dried cranberries

PH oven to 375 (f) & hit the tins with some cooking spray

Mix dry, mix wet separately. Add wet to dry until just mixed. Fold in the good stuff.

divide evenly into the prepared tins, 12 of them. Sprinkle the tops with turbinado sugar if you have it. I don't, Dave used it all up for his coffee

Bake for 18-20 m, until the toothpick comes out clean
